All cow milk contains proteins. About 80% of those proteins are casein. One specific type, beta-casein, exists in two forms: A1 and A2.
They differ by a single amino acid at position 67 of the protein chain. The change looks small, but it can change how the protein is broken down during digestion.
A1 beta-casein can release a small protein piece called BCM-7 during digestion. Researchers are still studying what this means for health.
A2 beta-casein has the amino acid Proline at position 67, so BCM-7 is not released as readily during digestion.
